Ivonne Campos-Rico is Research Professor at El Colegio de Tlaxcala, México. She conducted a Postdoctoral Research on Anthropology of Food at BUAP (Mexico), with a grant from the Mexican National Science and Technology System (CONACYT) from 2017 to 2019. Her research focuses on history and ethnicity during the Qing Dynasty, and political and social issues linked to the Chinese in Mexico. Among her numerous publications are Los chinos de ultramar: sabor, cultura alimentaria y prácticas culinarias (Overseas Chinese: Flavor, Food Culture and Culinary Practices, co-editor, 2019) and El Barrio Chino de la Ciudad de México: identidad, historia y cultura (Chinatown in Mexico City: Identity, History and Culture, 2021).
